Easter Egg Energy Balls
Craving something sweet but still want to hit your protein goals? These Mini Egg Protein Bites are the perfect balance of wholesome ingredients and chocolatey crunch.
Ingredients:
- 1 cup of oats
- 1 scoop of LEANFIT Organic Plant-Based Protein™ Vanilla
- 1/4 cup peanut butter or almond butter
- 1/4 cup honey or maple syrup (optional, for extra sweetness)
- 1/4 cup crushed Cadbury Mini Eggs, mini chocolate chips, dried fruit, or nuts (optional)
- 1/2 teaspoon cinnamon (optional)
- 1/4 teaspoon salt
Instructions:
1. Prepare the Base: In a medium mixing bowl, mash the bananas until smooth.
2. Mix Ingredients: Add the rolled oats, protein powder, peanut butter, honey (if using), cinnamon, and salt to the bowl. Mix until fully combined.
3. Optional Add-ins: Fold in Mini Eggs, dried fruit, or nuts if desired.
4. Chill: Refrigerate the mixture for 20-30 minutes to make it easier to handle.
5. Form Balls: Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet or plate.
6. Store: Store the protein balls in an airtight container in the refrigerator for up to a week or in the freezer for up to a month.
