Easy Morning Muffins

Start your morning off right with these mini oatmeal muffins packed with protein & greens!

 Ingredients:

1 cup rolled oats
1 scoop of LEANFIT PLANT-BASED PROTEIN AND GREENS™ Vanilla
1 tsp baking powder
1 egg
½ cup applesauce (unsweetened)
1 tsp vanilla extract

 

Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix all the dry ingredients in a mixing bowl.
  3. Whisk in the egg, applesauce, and vanilla extract.
  4. Lightly spray muffin pan and spoon the batter evenly into muffin molds.
  5. Bake on middle oven rack for 15 minutes, or until lightly brown.
  6. Allow to cool, remove from pan, keep refrigerated until ready to eat.

 Tip: Double or triple this recipe and store in freezer for convenient and easy mornings!
