Protein Apple Crisp
Warm up on a chilly evening with this decadent Protein Apple Crisp. Best enjoyed fresh from the oven, topped with your choice of ice cream or Greek yogurt!
Ingredients:
Apple Filling:
- 6 medium Gala apples (peeled, cored, and chopped)
- 1/2 lemon freshly squeezed (2 Tbsp. juice)
- 1 tsp cinnamon
Crisp:
- 1 cup large flake oats
- 1/4 cup oat flour
- 1/4 cup LEANFIT WHEY PROTEIN™ Vanilla
- 1/2 cup coconut sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup coconut oil, soft
Instructions:
- Preheat oven to 375º F.
- Peel, core and chop apples and place in large mixing bowl, add fresh lemon and cinnamon, mix together until combined and set aside.
- Stir together all crisp ingredients except coconut oil until well combined.
- Add coconut oil to dry ingredients and mix together using your hands until all clumps are gone.
- In 8×8 glass baking dish pour apple mixture in and top with the crisp mixture, spread equally over apples and press down gently.
- Cover with foil.
- Bake for approximately 30-35 minutes in preheated oven until edges are crisp and bubbling.
- Let cool slightly and serve with Greek yogurt or ice cream if desired.
