Protein Apple Crisp

Warm up on a chilly evening with this decadent Protein Apple Crisp. Best enjoyed fresh from the oven, topped with your choice of ice cream or Greek yogurt!

Ingredients:

Apple Filling:

  • 6 medium Gala apples (peeled, cored, and chopped)
  • 1/2 lemon freshly squeezed (2 Tbsp. juice)
  • 1 tsp cinnamon

Crisp:

  • 1 cup large flake oats
  • 1/4 cup oat flour
  • 1/4 cup  LEANFIT WHEY PROTEIN™ Vanilla
  • 1/2 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup coconut oil, soft

 Instructions:

  1. Preheat oven to 375º F.
  2. Peel, core and chop apples and place in large mixing bowl, add fresh lemon and cinnamon, mix together until combined and set aside.
  3. Stir together all crisp ingredients except coconut oil until well combined.
  4. Add coconut oil to dry ingredients and mix together using your hands until all clumps are gone.
  5. In 8×8 glass baking dish pour apple mixture in and top with the crisp mixture, spread equally over apples and press down gently.
  6. Cover with foil.
  7. Bake for approximately 30-35 minutes in preheated oven until edges are crisp and bubbling.
  8. Let cool slightly and serve with Greek yogurt or ice cream if desired.
