Sunbutter & Jam Protein Sandwich
Simple, fresh and oh so tasty!
Protein Bread
- 2 scoops LEANFIT ORGANIC PLANT-BASED PROTEIN™ – Plain
- 2 cups chickpea flour
- 2 eggs
- 1/4 cup olive oil
- 1 cup water
- 1 tsp baking powder
- 1 tsp salt (optional)
Instructions:
- Preheat oven to 350 degrees.
- Mix protein powder, chickpea flour, and baking powder in a medium bowl.
- Whisk in the eggs, olive oil, and water. Stir until just combined; do not over-stir.
- Pour into a loaf pan lined with parchment paper.
- Bake at 350 degrees for 45-60 minutes until the top is fully puffed up and golden brown.
- Loaf makes 10 slices of bread (5 servings.)
BlackBerry Chia Jam
- 600 grams fresh or frozen berries
- 1/3 cup chia seeds
- 1/2 cup water
Instructions:
- In a small saucepan, add the berries and water.
- Bring the mixture to a gentle simmer on the stovetop, while mashing and stirring the berries.
- Allow to simmer until the mixture reduces.
- Stir in the chia seeds thoroughly, and remove from heat.
- Cover the pot with a lid and allow to come to room temperature.
- Pour jam into a jar and store in the refrigerator for up to one week. (Chill for 2 hours before serving.)
Tip: If the berries are fresh, freezing them first will allow for easier mashing.
